Protein Bars Galore

Well, my plan was to blog more now that I am on my summer break but as you can see, that hasn't happened.  However, I have been doing a lot more cooking including making new recipes.  One of the things I have been making a lot of is protein bars.  All kinds of protein bars......gingerbread "Clif" bars based off of this recipe got everything started.  Then I made Blueberry chocolate chip, pumpkin chocolate chip, and peanut butter banana chocolate chip.  I am still working on getting it just right, but it's been a lot of fun experimenting with the recipes and making lots of new foods.

I have also been making some overnight oats after getting inspired by a friend who makes them for herself.  Along with cooking a lot of new food, I also rejoined Weight Watchers.  I decided it was time to have more structure and accountability again.  Counting calories on my own just wasn't working for me anymore.  Hopefully paying money, going to meetings and having that accountability will be just what I need.

As soon as I get the protein bars just like I want them, I will post a recipe.  But as you can see based on this picture below, they still have some work (notice the cracks in them!):

What have you been up to this summer?  Are you reaching your summertime goals?  I hope so!

  1. Hi Katy! I've had a blast reading through your blog and getting inspired!! I added it to my daily blog reading list ;)

I'm not quite vegan at the moment (have been in the past) but full time vegetarian of about 6 years :) Love all the recipes, gonna try them out!

  2. Thank for the update, Katy!

Can you give me a small suggestions? I'm vegan and I'm interested in a protein diet because of going into sports frequently. I mean as I've ready in the article about the daily requirements of protein for women, I have to consume a pretty big amount of proteins daily and I'm looking for a way to get it from vegan food. Yeh, I know that beens, soya, etc. contain lots of proteins, but as you understand I can't eat them every single day :) Can you suggest any tasty vegan recipe that will contain a big amount of proteins? Waiting for your answer.

P.S. Looking to see your recipe of protein bars :)

    1. I would look into vegan protein powders. You can order them online or if you have access to Trader Joe's, they sell a soy protein powder that I like. I add protein powder to smoothies and also to the protein bars that I make. I will work on getting the protein bars recipe mastered so I can post it soon. Thanks for reading! :)

  3. Wow! I just discovered your blog and 87 pounds lost! What an inspiraton. I just started my own blog to document my journey to health, weight loss, vegan diet. I find writing very cathartic.
I have about 150 pounds to lose, so when I find successful vegans like you, I am so inspired. I'm off to check out some of your recipes and other posts!

  4. Just out of curiosity, what is that deliciousness hanging out on top of those protein bars?

    1. It's almond milk yogurt and blueberries! :)
